I've always had a sweet tooth, and abstinence is not an option. What is an option tho is handpicking the ingredients I put in my tummy. These caramel cups, with a hard chocolatey shell and gooey on the inside, are easy to make and quite delicious, if i may say so myself.
How to make//
Caramel mixture
7-8 mejdool dates soaked in water and blended to make a paste. This makes it easier to mix
1/2 cup peanut butter of your choice. I use creamy peanut butter @happyjarsin
2 tbsp almond shmylk
Combine all the above ingredients in a bowl. Set aside
Chocolate filling
1/2 cup coconut oil
1.3 tbsp honey or maple syrup
1/3 cup cacao powder
Heat a pan, add the three ingredients and combine well
Prepare:
Add 1 tsp chocolate into a muffin case and place it in the freezer for 10 minutes
Post 10 mins: take the tray out and divide the caramel mixture into the cups
Fill in the remaining chocolate mixture into the cups to cover the filling
Freeze for 2 hours
Store in a glass box
